Es necesaria, sin embargo, una distinción semántica fundamental: Definimos aquí como ayuno profundo la cantidad suficiente de inanición como para agotar las reservas de glucógeno hepático y muscular, inducir la beta-oxidación de los ácidos grasos de reserva (los michelines o grasa visceral) e iniciar la autofagia regenerativa.Para los propósitos de este libro, todas las formas sub-totales de restricción calórica (si bien tienen un grado bien establecido de utilidad) se consideran más bien como Alimentación en Periodos Restringidos (TRE) o alimentación intermitente.No es para perder peso rápido (aunque sí podría perdérselo) sino para optimizar la salud gracias a la restauración metabólica. El libro está pues orientado hacia la longevidad saludable. Es en definitiva, un manual de operaciones para seres humanos responsables, con la resolución de tomar las riendas de su salud física y psíquica. Irónicamente, gastamos fortunas tratando de administrar la miseria fisiológica en que nos colocamos a nosotros mismos. Es contradictorio vivir glotonamente una vida sedentaria y luego pasar el último tercio de la vida en estado deplorable, con discapacidad fisiológica e intelectual.En el área de la antropología médica y nutricional, mi experiencia proviene directamente de investigaciones de terreno con los pueblos del Ártico (ver imágenes en las páginas siguientes), tanto como de experimentación básica en anfibios (Ambistoma mexicanum) y roedores (Cavia porcellus).
